Mouth bacteria give some wines, food a flavor boost

A bacteria that came from our mouth gives some of our wines, fruit and vegetables an aromatic flavor. Dr. Christian Starkenmann of Firmenich said that after taking a shot of wine, after 20-30 seconds, you can feel a powerful aromatic rush at the back of our mouth.

Other researchers had shown that the powerful aromatic that came from our mouth contain odorless sulfur compounds and the compounds that are released called thiols gave foods their scent.

this research could help develop food products more composite type of food. they also noted that this could produce bad breath and body odor.
